A couple of weeks ago, I went to a sugar shack that belongs to my cousins in Saint-Henri de Lévis. They invited us, the Montreal cousins, to spend the a couple of days in their huge chalet. We spent most of our time at their sugar shack. At night, they treated us to a traditional sugar shack meal. Scrumptious! Their maple syrup is the best I tasted in years! We had such a great time. I haven't seen these cousins in years and I enjoyed spending time with my family.
To make maple syrup, you need to collect the sap from maple trees. This can be done only during spring, when the trees are waking up and draining water from the ground. Then you boil it until it reaches the right density. Then you can it. The lighter the syrup is, the less tasty it is, but if it becomes too dark, then it tastes burned.
